Back in the brewery nice and early at 7:30am and today just to make my morning even better, it is raining, but can not complain about this as they really do need the rain up here, as everything is very dry and still have a fire risk in the hills around the town. So anyway today we are going to be making Hellfire Amber Ale, which is their Gold Award wining ale, so must be good stuff.

This is actually not as hard to make as I had thought it would be and we start to fill the mash tank with hot water and the different types of malt grain which I milled the day before. This is then left for a while being heated and while that is going on I have to mill even more malt grain ready for the next day when they are going to make even more of the ale which we are making today. After a while all of the liquid is transfered into the main kettle tank and we add some hops to it this is what will provide the main taste and aroma to the ale. As this is then left to boil for a while I can go off on my lunch break.

When I come back I give one of the others a hand with clearing the back yard as it has been used for a dumping ground and they want it a bit neater, it is still rain at this point some times quite hard so keep trying to hide in the shade, but at least it is not as cold as at home. While this is going on Davids farmer friend arrives with a couple of large containers in the back of his yut (Aussie pickup truck) one of these is placed next to the mash tank and all the grain is pulled out of the tank to be used by the farmer to feed his cattle.

Then later on we start to transfer the liquid which we have produced into one of the large fermating tanks from the main kettle tank, while doing this we have to ensure that all the bits are left in the main tank so only drain from the side of the bottom as it dips down in the middle. After this is completed we then have to sanatise the entire area as we need to add the yeast to the liquid which has been made so far in order to actually turn it into an ale. After this is pumped into the main tank we then have to do a clean down of everything to make sure it is ready for the next day and the next batch which they will be producing.
